What kind of signal does tank level sensors transmit?

I have 5 ballast compartments and want to know how much water I have.

Do you use high pressure air to nlow out the ballest tanks. Flooding them just DIVE

Not really. It has a sandwich construction. That means it won't sink, even if completely flooded. That’s why a metal one would be better for this kind of fun.

Use your imagination : 7m amas on the roof. 2m amas bows anywhere . Superstructure on 4m long bed . Impossible ?

If you are filling the ballast tank before leaving you can calibrate a dipstick to guess it within several kilograms, but 10kg would be a more realistic unit of measure than 1kg, that is a one person difference post morning ablutions.

The problem can be solved in many ways. Precision down to a single liter is truly excessive.
