If you actually want to make something that looks like an Age of Discovery era vessel, I would suggest studying a copy of Basil Greenhill's excellent book "The Evolution of the Wooden Ship". The very good marine artist Sam Manning's perfect artwork along with Greenhill's text lays out how the lines and shape was drafted.
