New Orleans is on the Gulf Coast, seems a reasonable assumption it will venture out there

Mr Efficiency, we fish out of Shell Beach Louisiana . We do not fish offshore, although we will go into Breton Sound on good weather days. Primarily we fish the lakes, bays and bayous. There are boats just like this one around the camp with 350s on them and they do just fine. This boat will be stretched to 27, the 400 will probably cruise at 35mph and in the bays etc that's plenty doable.

If you want ability to run shallow, continue the tunnel to the new transom and hang your outboard on a jackplate. But if you want pure speed, the tunnel can rob you of some of that.

I would get rid of the tunnel.

I'd be tempted to keep the tunnel on that boat.

A big problem is it greatly interferes with the bilge space for sea chest etc

Looks like the demolition stage is just starting, plenty more rotten wood in there yet!
I’d get the hull off the trailer and well cradled before taking out much more structure, so it doesn’t loose its shape.

OK, well it certainly is not an offshore boat. Unless you have the need to cover a lot of distance quickly, and it better be on calm/semi-calm conditions, I think a 400 hp Verado is about twice what you need
