I need to figure out if the C140W has enough plugs to do everything I need it to.
I'm going to use it for GPS, Radar, Fishfinder, and Fuel Flow.

    Internal GPS
    RD418D Radome
    Maretron FFM100 fuel flow
    DSM300 Fish Finder

I don't really understand seatalk hs, seatalk, seatalk ng, and NMEA 0183 input.

I wish it was easier like fishfinder plug, radar plug, fuel flow plug etc.

Any Raymarine guru's that can help out here.

I did and I'm still waiting. No response as of yet.

You'll need to be a little more assertive.
