I have a 22’ plus pod x 9’ aluminum cabin cruiser. Installing 2 captains chairs up front. Trying to decide best spot for steering wheel on dash? Will closer to the center of the boat make it more stable? Is there a rule of thumb for wheel placement? Thanks

Welcome to the forums...
You should place the wheel so the conning officer (i.e. in your case the helmsman) can see what is to the front and back on the stbd side to ~ 22.5 dregrees abaft the beam. Nothing to do with the stability and everything to do with the required arc he/she is required to give way to.

Put it where it’s best/most convenient for you.
Consider control cable runs and electrical wiring.
Pretty sure there won’t be any huge blind spots on a vessel this small, as long as reasonably close to the center of the boat.
