So I've tried installing the program on my data hard drive instead of the programs folders... Ive gone back to the program x86 folders and removed all of the read only and full access granted to folders it appears to be targeting.
Every time it makes 3 shortcuts , on in my user folder, one in a windows user folder and some internet shortcut. The shortcuts list the target folder but the folder remains empty. Any thoughts?

Mine is installed 'stock' in the 'program files (x86)' folder on the main drive, I typically do not use a data or flash drive unless I am doing a 'sneakernet' to the 3D printer or CNC.
Doing a 'saveas' puts the *.saildef file in whatever folder I choose, the exports also go to whichever folder I choose.
If I do nothing, the *.saildef goes to the virtual location which can't be seen but can still be opened.

Are you able to save any work and open it via the 'open recent' function?

The open recent function started working after I gave folder permissions. I am using windows 10 pro. It makes pdf fine, it keeps just making shortcuts for dxf but the target folder is full permission and still nothing... What do you have for a CNC? That's another project on my list but way down. I use my 3d printer a lot for all sorts of stuff, very cool tool. I've even made minkota propellers and prop adapters for standard aluminum props to maximize my minkota speed based on amp draw...

The CNC is an older 24x24x3" [6060] gantry style, exact make and model is no longer made, heavier built than most these days.
It's very useful in sign making and cutting Masonite patterns to use to guide routers and hot wires for EPS foam cutting.
It struggles to do 3D milling in hardwoods, FR4, etc. due to Z-axis drift. I need to look into this.

Your software issue is perplexing. I could try converting one into DXF in the meantime if you can transmit the contents of the *.saildef file.

I just pasted C:\Users\<username>\AppData\Local\VirtualStore\Program Files (x86)\ into an address bar in File Explorer (Win 11 Home) and could see everything in the folder including the Sailcut CAD 'virtual' sub directory and once in there the DXF's.

The behaviors I described are with version 1.3.9.
I was not aware that there were releases this year, 1.5.x
Glad you got it sorted, looking forward to seeing what you make and sail.
I had some time yesterday and messed around with it all, using Delftship Free for the hull and Sailcut CAD for the sails, assembled in Rhino.

    Hi J_Hapster,
I also spent some time looking for examples of sail designs.
Here is the only file available from a reliable source that I could find (as an .igs file):
Sail Aerodynamics Benchmarks | VOILAb: Vortex Interaction Laboratory https://voilab.eng.ed.ac.uk/benchmarks
It is probably the flying shape. What the actual cut design looks like is another matter entirely. I have no experience with this, as I have not yet tried a gennaker.
One more thing about Sailcut CAD: I have had good experiences with pattern construction/unfolding in Crosscut, but I had problems with the triradial cut. The unfoldings should be checked carefully. In my case, there were problems with the line of the seams between the sections.

I am also finding the crosscut pattern results in the best fitting pattern seams and appearance. Mitre cut took a lot of fudging to get a smooth layout.

Linux is very good now. I have been using Sparky Linux semi rolling for at least seven years and had little trouble on various machines.
