Can someone point me in the right direction? I am looking for reference publications that will tell me such things as: What percentage of a boats displacement would the hull structure be; How to calculate/determine stores and equipment capacity etc. General planning sorts of stuff for a purpose built boat.

"The Elements of Boat Strength" by Gerr is a good start. At least you will be able to ask the right questions. There is no standard percentage of displacement for the hull structure. The designer and/or owner makes decisions at the planning stage that determine all those things.
