    wine around these parts is about 12%
    ok but not great
    might add a little ever clear to it

    burns off when you cook it anyway and just leaves the flavor but it sure tenderizes things

    I buy the cooking sherry with the highest content on the shelf
    your welcome to try whatever

    I think the Saki only has about 13 or 14%
    and it seems to work but takes a little longer

    try buffalo in Saki
    its already pretty tender and once marinated for a day or two its mind bending
    thing is its so lean it cooks really fast
    so be careful not to overdo it

    Jap Saki
    and it comes in varying contents
    I use the cooking stuff which is I think 15% and has sea salt added
    the drinking stuff is about 18% maybe a little less not sure

    but yes
    Japanese Saki

    adds a nice twinge to fish to
    also kinda pickles it so you can cook it less

    for instance herring
    you could just soak it in Saki for a few days and eat it raw but say
    trout that I catch locally in the summer I soak in Saki for a while in the cooler then grill them up later that day
    fish tenderizes really easily and frankly kinda falls apart if you leave it in for to long

    I am far from a racist although the term might be misconstrued as such
    there is also american Saki
    Hakatsuru is brewed here as is some Momokomu

    I gotta go with Bos on this one, Hoyt. The racism is in the intent. I've got Japanese and Chinese friends that call each other Jap or Pakay ("Pakay fire drill"). My wife calls herself a "frijolera" (beaner). I've been told I have a double skull (hard to knock out - or get information in a half-Polack) and I certainly take no serious offence. I believe that the only ones truly upset about their race, want to be singled out because of their race, and hyper-sensitive are the blacks. So, Bos...If a friend calls you a "Redskin", does it bother you?
    If Sniper said "Jap" it would have a different meaning than if Boston said it, IMO...Tho, I know of a few guys born in the nopales that tell people that they are Italian, Argentinian or such, because of the recent ill will with illegals. There must exist racists that confuse "Hispanic" with "Illegal" But seriously, I think most are beyond that. To me, one of the most derogatory things you could say to someone is that they were duped (and stubborn) about AGW, and that credulity is color blind. Here, it could go on the joke thread but maybe we could stand to lighten up (I don't know any Jap jokes)...Learn Chinese in 5 Minutes;

    I wanted Bos to come back and address the "Redskin" thing. I truly don't know (although, mutt that I am, I have a little "redskin" in me - I don't think of myself as American Indian, Polack, Kraut, or anything else I don't know about!).

    I got no problem with the red skin comments but I do get a twinge when I hear chief
    I think I have friends of just about every flavor and you would be surprised what you can get away with if your just having a good time and shooting the **** among friends

    buddy of mine ( black guy ) has issue with the N word

    Italian friend of mine gets all wacko if someone calls him a wop
    really seems to piss him off but no one seems to know that term these days so he's mostly cool

    I notice you can call a Mexican just about anything as long as you leave there mama out of it
    not sure what thats all about but if you ever want to get a Mexicans attention just start talking about his paternal heritage

    my Oriental friends hate it when some jack *** gets after them for there version of English but you can swear up a storm and they just look at you

    everyone's got there thing I suppose

    since I'm not out in the sun that much any more I seem to have gone pale skin
    so at this point you would have to know or you might not even guess
    ( unless you realized how bad my English is )
    east coast Indian ( Iroquois ) are not that dark skinned to begin with and Im a half bread anyway )
    back in the day when I was working outside all the time
    not much missing it then
    I'd get dam near black

    Yeah, that is true about the Mexicans. I think it comes from their (mostly) reverence of Mary. "Mom" is special to most of us but they carry it to the next level!
