At the fiberglassing stage of my nancys china dc 15', The plans call for 1 layer minimum of 6 oz cloth for the hull, but thought it would be best to go with 2 layers just to be safe. As for the chines it called for a double layer on all seams.. im assuming they meant a double layer of 6oz tape but wasn't sure.. how much support should the chines need?

Are the chines timber reinforced? If so, two layers of glass is plenty. Be forewarned; glass will NOT lay on sharp edges and all edges need radius of typ 3/8", 1/4" min

There is a series of bulkheads with epoxy fillets and a triple layer of fiberglass cloth tape on the inside of the chines if that's and concelation

Follow the design. 2 layers is gonna be good if the chines are already epoxy bonded

Follow the design is good advice.
