I am developing a sailing ship of 5 meters of high performance,
Did I want to know as I determine the size anfd area of the rudder, of the centreboard and also the hydrodynamic profile?

Jean, you ask a lot of questions.
The answers depend on many details you don't tell us.
I suggest you read some more on the subject and then make some sketches.
Then you will get more response and a lot of comments :)

Keel, rudder and sail area depend on each other and the hull shape, ballast and crew etc, etc.
