    This is the exact same hull wihtout the superstructure at 11 500lb displacement.

    Using ~ 24,5 feet for the DWL according to your drawing and 11500 lbs (so 5,134 ton), that gives a DLR of 349, it is quite heavy. I think your specifications are compatible with a DLR of 250 to 300.
    Here is the Bob Perry article about "Revolution 29" , a 29 ft scow bow cruising boat, the closest design I found out to compare with your project, its accommodation can inspired you . Its DLR is 232 and Bob comment is "this is not a light boat ..." (PS : at the end of the article a small mistake : LOA is 29, not 22,8)

    OK I made the calculation for rate of immersion. It gives more or less 1000 lbs/in of immersion.

    Fro the canoe body with a draft:
    22 in draft = 9500 lb displacement
    23 in draft = 10 500 lb displacement
    24 in draft = 11 500 lb displacement (design waterline seen above in the drawing)
    25 in draft = 12 500 lb displacement

    I computed basic value from the Carl Adler sail calculator on Tom Cove website with light and heavy displacement and this is the value I get:

    LOA = 26 LWL = 24.5 Beam = 13 Displacement = 9500 Sail Area = 550
    Displacement to LWL = 288 Hull Speed = 6.63Sail Area to Displacement =19.62
    LWL to Beam = 1.88 Motion Comfort = 19.16 Capsize Ratio = 2.46
    Sailing Category = racer/cruiser

    LOA = 26 LWL = 24.5 Beam = 13 Displacement = 12500 Sail Area = 550
    Displacement to LWL = 379 Hull Speed = 6.63 Sail Area to Displacement =16.34
    LWL to Beam = 1.88 Motion Comfort = 25.22 Capsize Ratio = 2.24
    Sailing Category = cruiser
