I own a boat with twin O/B that I keep in saltwater year round.
I have had problems with pitting in the power trim, I have been told that I should not paint antifouling on that part of the engine and that it would affect the electrolysis, If I don't then I have barnacles growth.
What should I live better with?

Apply a thin coat of water resistant grease like Molykote copper paste.

Outdrives are troublesome in seawater. Ive never seen a paint that works. They always foul.

I think the best procedure is to haul and clean then paint, preserve or whatever you choose ..several times a year/

The foul I can live with, I can brush it off from time to time.
    The pitting is more problematic.
I tried applying antifouling to the trim in the past, and had problems with the operation as it became harder at the down trim, and I had to sand the parts that rub together to make it work again.

The fisherman motto to maintain the boat: even if not needed, do it anyway.
Meaning it is a constant work.
As saids CDK grease is the most efficient protection as long it is used very often.
