Does anyone know of a good source of information for preparing weight estimates - ie generic data like the mass of a toilet, basin, stove, sinks, cabling etc etc etc

Some of what you need might be in the "Boat Data Book" by Ian Nicolson

Defintetly Paul is right: Boat Data Book.
Also, if you have a look at Larsson, there's a detailed weight schedule as you say. You can always use a surface relationship to work out your own boat.

Sorry, I mean: "Principles of Yacht Design", by Lars Larsson and Rolf E Eliasson. It's a yacht design book that takes you through the whole design of a 40 footer. It explain everthing, from parametric study to scantling calculations. It also includes all the necessary drawings/plans to understand it. Here in the UK it costs about 30 pounds; it's worth.
