I want to build a boat hull using a plywood construction then glassing it over what plywood would best serve as a core wood.

"Marine" ply is the obvious answer. Is this a small boat? A fast boat? A sailboat? A fresh water boat? Etc., etc. Exterior is OK for "some" projects, so is "signboard".
