There are a few potential kite assisted boat projects being considered around the traps. There are a few examples that have actually been built though to date most have been conversions of existing designs rather than bespoke designs. The largest pleasure craft example I've seen on the web was a farrier (i think) tri somewhere in Hawaii that used a kitesurfing style inflatable kite. Not sure of its performance stats.
I'd strongly recommend you learn to fly a small ram air kite to familiarise yourself with the dynamics of kite flying. An appreciation of how kites generate power should help you avoid some design mistakes. Even better - learn to kitesurf so that you really understand the forces at work.
