Hi, I built a 9ft x 2ft punt. Like to use hand powered paddle wheel, 8 blades set at 45d, 7 inches long 5inches wide with 1inch of blade in the water. Any advise? Would be grateful. Hope it's the right forum.

Yes, put more than 1 inch of blade in the water.

Hi, wondering would 10 blades be better than 8? Going put 2inch in the water. Should the blades be sandwiched between two wheel cocverings or is blades just attached to one wheel?

It is a very narrow punt. The wheel and mechanism to make it turn will likely bring the center of gravity up. You will have a serious lack of stability problem.

Not entirely sure what you mean.
Can you post some pictures and a diagram?
I see many issues here, stability, as Gonzo says, is one of them.

I don't think you have it right. For best powering, there should be approximately the same blade area in the water at all times. With the quoted geometry, the next paddle is 1.5 " above the water when the loaded paddle is at maximum depth. So you need to lower the axis of the wheels 1.5". (edit) assuming a non-feathering wheel.
