Go for it, but with caution and sense. You have already shown such by your definition of your own personal use of a boat. Many newbie builders don't have a clue about what they want the boat to do for them. Check out Sam Devlin's books. He's been building S&G a very long time.

Can you do a stitch and glue a 1/2" ply hull with 1/16" mohogany laminate plank for presentation purposes?

If a ply hull is fair, no problem adding final layer of veneer. An epoxy compatible varnish system will show off your handiwork.

You could do a glass wood grain panel . There is glass with a lot of differant wood grain prints and done nicely looks pretty cool . !
