Laminate Bamboo Flooring - Coating

I am building a plywood dinghy and am using some laminated Bamboo planks for the floor. They are a light colour against the ply.

Can anyone advise what sort of coating I should Use.

The dinghy is epoxy / varnish. I have seen that often a floor is oiled - not sure why perhaps to give some none slip.

Should I - Epoxy & varnish, just varnish only, or oil?
