Outboard Mounting

What are the basic rules for properly mounting an outboard on the transom of a sailboat such as prop depth, location ( offset versus centerline,where possible) ? Second, recommend best mounting brackets,configuration for safe and easy handling. Assume typical 25 to 27 footer. Cal,O'Day type. Thanks
