Choosing right quadrant & pitch

A question to the pros:
How do you choose the right quadrant radius and pitch?

For example: If you had a 35ft cruising monohull with a balanced rudder, fin keel, 4.5t displacement and an 815mm (32in.) diameter wheel (restricted by cockpit size). The perfered quadrant radius would be as small as possible, thus 150mm (6in.).
What would be the correct pitch?
