As to deck tents:



That one was okay, but didn't take full advantage of the possibilities. Because I use boom jaws and adjustable topping lifts, the boom, mainsail, and sprit can be hauled up the mast to give standing head room. I'm currently sewing a custom tent that hangs under the boom, and gives a room 8 feet by 8.5 feet. Pretty luxurious for a 16 foot boat, I think. You can put two cots or a double air mattress on the center deck.

did you look at Richard Woods designs?
He has got several that can fit your need.

The one I wanted to build as a day boat is his Sango http://www.sailingcatamarans.com/sango.htm it has folding hulls and can be trailed, you can choose a round bilge or an easier to build plywood hard chines version.

Maybe a better choice would be my Strike 18 trimaran.

Outriggers and rig from an old beach cat - so cheap to build. Also quick to build as you only need make a mainhull. Of course no where as quick to sail as a beach cat, but you could end up with two boats in one. A beach cat for you when fun sailing, a Strike for the family when in cruising mode.

The problem with beach cats is you sit "on" them, you sit "in" a trimaran. The Strike cockpit is 6ft wide so you can sleep in it athwartships. Also it comes either as an open deck boat or with a removable cuddy. A studyplan is available on my website

Others have done similar designs, google for them and I hope google finds what you are looking for.
