Plywood Doghouse

Hi,
I am restoring a 1981 Sea Ray 195 and the doghouse was destroyed. I am using exterior grade plywood for the construction but I need a good method to seal it. The exterior will be upholstered to match the rest of the interior but I don't want to have to build another doghouse in six months. Any suggestions would be appreciated.

Use marine grade ply and encapsulate it with three layers of Epoxy resin (any brand or quality), work in one go if possible to achieve a chemical bond rather than a mechanical. Means: apply the next layer if the former is not cured.
Paint or varnish for UV protection!
