What weight & weave fiberglass?

Okay, I have the clear Douglas fir supports in place for my cockpit sole. Area of 11'x7'. They have been epoxyed with West and I have the MDO cut and ready to epoxy before installing. I plan glassing the floor but what weave and weight should I use? How many layers? Has anyone had luck with using latex paint on cockpit floors over fiberglass epoxy? Seems wrong to use latex but an old timer recommended it.
