Nice stuff peel ply..problem is its an advanced technique for a beginner. To the OP...buy a small piece of peel ply and give it a try. In future you will be glad you did.

Peel ply is magic stuff and can make a really nice job ! Its gets shot of surplus resin and compacts the glass you can see staight away where all the highs and lows are and with a roller can flattent eh ighs and fill in the low places and make a really nice job . Takes a wee while to get used to what you can do with it but once mastered even a reall amature can make a nice job of there laminating !!.

Like he said, for the experienced it would be easy, for a first timer just getting the glass down can be challenge. The lumps and uneven areas I was talking about are the result of doing multiple applications of glass to cover screw holes, seams and such, peel ply won't help with this. Plus when doing a nonskid finish the mat texture is not an issue and may be desirable.
