simple question

how would you move the centre of buoyancy on the hull profile of a catamaran?

THat is not a question with a simple answer.
2 choices:
1.) Get different hulls
2. ) trim the boat to achieve what you want, and get used to comments about it's being out of trim.
3.) Add some sort of "Bump" to the hull to move the LCB. Allow for the weight of the bump when calculating it's placement.

Same way you do it for any boat: change the sectional area curve of the demihulls. To add volume, you can make the sections wider, deeper, or fuller.

I like to start with the center of buoyancy and displacement, then work backwards. From these parameters you can define an area distribution from a family of area curves. Then define the general shape of the sections. Finally, scale each section to match the area curve. The shape of the hull falls out from these choices.

A note of clarification - I was assuming that actual catamaran hulls were involved, Tspeer is assuming a lines plan is being developed
