Rudder adjustment on 33' deep-v hull

I'm in the midst of a repower on a 33' Blackfin F/B having 22 degree deadrise aft. It had 435HP 3208's w/ TwinDisk MG507A-1 gears. The boat has a marlin tower and weighs in at around 21,000#. She is recieving Cummins QSB 380HP w/ new TD gears all electric and troll valves which will save about 1700#. I reworked the steering system due to the boat being in the yard and found alot of play in the rod-end's and packing that are now new and tight.

My question is how much trailing edge rudder toe-in should one set this type of boat up with?

Some general info that should be noted is, these boats typically ride stern heavy needing quite a bit of trim-down to get on plane. With rudders set at zero many have noted a squrilly ride down swell as well as harder to control boat at WOT.

Also when we lost one of the motors Ther was NO WAY to manuver the boat. Probably due to the wide shaft spacing, deep-vee, small sized rudders and large wheels(24x26).

I have spoken to the new blackfin Co. and to the original rudder supplier with some mixed answers and reasoning behind them. The yard also has some ideas but would like to hear other feedback before she gets splashed for seatrials.
