Hull Measurement Devices

Does anyone has an idea on how to measure the offset of an existing vessel/boat?. I have just bought a portable laser measurement device primarily used for construction industry and wonder if I can turn it into something that can measure the ship offset. I need this offset data in order to produce Stability Booklet. Anyone who has an experience of using hull measuring devices, I would appreciate very much if you can offer me some advices regarding to this.
