Marine and automotive vinyls are rated for smoke. Are you looking for a fireproof material?

I tried "fire rated interior panels" in a search engine and got 250.000 hits. Maybe a good idea to start there!
Good luck

Metals and Cancer causing insulators. Fiberglass wool, Mica board, Asbestos. Maybe Sheetrock and Bathroom Cement Board. Ceramic tiles, 12" for cost reasons. I am tapped out.

Can you use metal? It used to be common in yachts to have the galley stove surrounded with metal.

I agree gonzo, however most galley stoves come with a minimum clearance from combustibles in the installation instructions. That should be all you need.
