Best article I've ever seen on sailing catamaran design: http://www.john-shuttleworth.com/Dogstar50-article.html
And the essential primer on multihull seaworthiness: http://www.john-shuttleworth.com/Articles/NESTalk.html
There are some interesting papers in Suttleworth's catalog that don't appear on his web site.
Kurt Hughes' catalog (http://www.multihulldesigns.com/) has good info, too, as well as an extensive array of designs of all sizes that can serve as starting points for representative weights, sail areas and proportions.
A Simonis cruising cat case study is in Claughton, Wellicome & Shenoi, "Sailing Yacht Design - Practice", Addison wesley Longman Ltd, 1998.
An oldie but a good discussion of many practical design aspects: Brown, Jim, "The Case for the Cruising Trimaran", International Marine Publishing Co., 1979.
Charles Kanter's "Cruising on More Than One Hull" (SAILCO Press, 1992) has a good survey of different types of mulithulls along with stats.
Martin Schoon has some excellent engineering analyses at http://hem.bredband.net/b262106/Boat/tech.html
The Chesapeake Sailing Yacht Symposium (http://www.csysonline.com/) has presented many articles on multihull design over the years - you can get back issues of the proceedings.

Joseph Norwood's "High Speed Sailing Design Factors". An oldie but a goodie. Adlard Coles
