I would like to get advice on the following quandary...I would like to pursue a new career as a designer of canoes, kayaks and rowing boats. I have been looking into instruction and the programs that I have found (YDS, Westlawn and the Landing School) all seem to have reputable programs, but they all seem to cater toward much lager craft. My question is: Are these programs needed for boats such as I am interested in, or would they end up being overkill with regards to information? Would the principles learned in these courses need to be learned regardless of the type of boat being designed.

I would hate to make a huge mistake in terms of time and finance!

Thanks in advance,
Dan

In your aspirations you have narrowed the field to much. Because of that I'm sure you will not find a program specially for canoes, except maybe at a local boatbuilder ("how to course" of 5 weeks).
And why not learn more than needed for designing canoes, it will give more chances on the job market!
Good luck with your persuit.
