Just purchased 4.3 metre fiberglass hull. The motor was replaced with a 35HP Johnson outboard. There is packing under the motor on the transom thus lifting the motor high on transom. Would like to know what is the correct setup eg height or measurement of cavilation plate below the hull etc. Can anyone help.

With the proper propeller raising the engine up on the transom can increase speed. They sell jack plates that allow the engine to be raised in small increments to fine tune top speed. With that said most manufacturers recommend the cavitation plate be flush with the bottom of the boat.

In a deep vee hull it can be about 1" (25mm) up from the bottom of the keel.
