Wood-based materials for sailing boat interiors: Front-end?

For our next project, we wish to scan ths market for interesting (sparsely-used) wood-based materials for sail boat interiors, in addition to the traditional marine ply and cherry, adding an extra dimension, still enduring the conditions.

Any recomendations (all inspiring ideas are welcome)?
