does anyone know if 1/4inch M.D.F with groves cut into it is more flexible than 1/8 inch ply?

it depends on how many ply but mdf is the worst thing out there (I HATE THE STUF)its like card board try drilling a pilot whole in it near the edge and over tighting a screw in it then you will see use wbp (waterproof boilproof ply ply)get it at B&Q HOMEBASE WICKS ANY DIY STORE IN THE UK is so much stronger there is a waterproof mdf its medite.

In the US, Medite is a particular brand of MDF, or medium density fiberboard. The Oregon-based company produces Medite and Medite II, both interior products. They also produce Medex which is rated for outdoor use. It's a good, stable, fairly high density panel for paint grade casework or as a substrate for veneer for casework. No way I'd ever put in a boat. Never.
