Most electric trolling motors have props designed for bigger heavier boats than your kayak. Your lowest battery consumption would be with a prop suited to the average speed you wish to travel (say, 5 kts).
In general, a lighter boat would have a prop with more pitch, possibly two blades, and smaller than a prop designed for a larger boat.
Someone here must have a prop book, like the one by Dave Gerr. They could probably tell you which prop would be best for your kayak.

I gotta say, at this point, that this reminds me of the news story, here on the coast, when a kayak, loaded with cocaine, was intercepted as it made landfall in the middle of the night right here in Victoria. It was very likely making autonomous trips back and forth from the USA to Canada trading "BC Bud" (marijuana) for US cocaine, pound for pound.

I don't mean to fear-monger, but heads-up folks.

joco,
Torquedo makes a very nice electric propulsion system with all the engineering done.
