This is a Western Austalian designed hull that is a great sea worthy performer. I bought it for $100 Australian and have cut the deck off it. I am using West System Epoxy to fibreglass in all the reinforcing to make a centre cab out of it. I will gladly take advice and i will stick up some picks as i go. This is where i am so far.
I've done similar conversions on a few occasions, you're doing fine. I usually remove the deck cap completely, to prevent the natural leak point and allow me to change the shape of the sheer. You're doing great, thinking light weight and strong, rather then heavy duty and strong, it'll save you gas and increase top speed. Keep up the good work and more pictures as you progress please.
. . . and welcome aboard . . .

I'm doing something similar to an Alacrity 19 ft sloop. It's a fine little bilge-keeler I picked up for rebuild and resale.
In this case I am going to convert a 3-sleeper cabin to a cuddy and from self-bailing to deep cockpit. What decided this was the relative ease of doing so compared to re-tabbing and replacing the interior plywood. this way I can remove remaining tabbing and wood with complete access. Add oak coamings, bench seats, and slatted sole. The boat is absolutely flawless otherwise. The price was right and it should be a fun project.
Modifying is challenging, but rewarding.

Thanks. I will keep the pics coming. I've got it upside down at the moment and are putting the primer and top coat on the hull. Then ill post the photo when its back on the trailer.
