How to define the Sails for a ship of high performance of 5 meters whose the total weight of the sailing ship 300 kg ? and had it accommodated on board at the most 3 people in the total of 240 kg more?

Its really more about how large sails can you hold up in the weather you will commonly be sailing in. There is a lot in Bethwaite in this sort of area.

Type about 15 knots for example

I've used the figure of 500 sq. ft.(46.4 sq. m) /per metric ton(2200lb.) for the power required to plane- I think I found it in Marchaj a long time ago. There is a formula: Displacement in lb.'s divided by( LWL waterplane area in sq.ft. times waterline length in feet) which gives a figure that should provide some degree of planing up to 1.5 (I14 about 1.22)-with enough power. From Sailing Yacht Design by Douglas Phillips-Birt.
Pierre Gutelle in "Design of Sailing Yachts" has a whole chapter on planing.
