I am looking to build a closed cockpit one man powerboat and I need a plastic safety canopy to enclose the driver, similar to a fighter jet canopy. I would really appriciate some help in finding out how to obtain one. Thanks!

Try contacting an experimental aircraft builder (home builder). Particularly a builder of Cozy (spinoff of Rutan's Long EZ) or similar type homebuilt could put you in the right direction to either make or purchase the type of canopy you require.
