As an ex-Nordic - Yes. There is no age barrier in learning to ski. Suppleness of limbs is all that is required...but don't enter a downhill race straight away....

Almost forgot. And you'll need a pair of skis....

Sure, the only downside with waiting is that since adults hurt themselves more than children, you will hurt yourself more doing it

It's not so much that adults get hurt more than children ... it's just that when we do get hurt the recovery times get longer!
